super easy and simple peach pie for the non baker

I am so excited to write this post today! I accomplished a real life adult task, one I never thought I would but COULD do all on my own. My grandma was an amazing pie maker, her specialty was blueberry and it was incredible. Bake a pie you ask? Who has the time or the knowledge to do such a thing?

Here in the Okanagan it is not only wine country like I mention in this post but the hills are also full of orchards. Apples, Peaches, Pears, we have strawberries and raspberries and lots and lots of cherries. Farmers markets are every weekend and the orchards are also available to have u-picks.  Last week you saw this post where Sofia and I went peach picking,  and today I am going to show you what we did with all those peaches!

I decided I was going to bake a pie, so naturally I turned to my best friend Pinterest (follow me if you aren't already!) and searched peach pies. I was determined to make it all from scratch, I mean how hard could it be? I found this easy and simple recipe which also had a link to an easy and simple pie crust recipe as well.  Confession: I have never baked a pie in my life, cookies yes, cake from a box? yes! a homemade pie and pie crust.... this will be a first!

I started with the pie crust and followed this tutorial and post. Reading the directions I wasn't too sure I was on the right track and silly me, I didn't think I needed to watch the extremely easy to follow you-tube tutorial. So once I had finished my crust I watched the video (duh!) and I had done it correct. Yay! The key is to not handle the dough very much. I probably added a little too much sour cream and I was so scared of handling the dough so I barely touched it.  Instead of baking the crust like the tutorial calls for I put mine in the fridge until I had the peach mixture ready then I baked it all at once. PS my crust turned out AMAZING!

The peach mixture for inside was easy. People, I mean EASY! First I peeled the peaches (i googled that if you put peaching in boiling water for 30 seconds ( or up to a minute) then transfer them to ice water the skin virtually falls off.  Next I followed the steps and ingredients from this post and within 5 minutes my filling was ready to go. PS careful on the amount of cinnamon, a little goes a long way!

Here is a tip: do not fill your pie too full. It will spill over and then you will have one really smokey oven! I also put a baking sheet under neath my pie pan but some still spilt while I was putting it in the oven. I had the smoke alarms going off for the first 30 minutes. Please imagine the amount of backtalk I received from my husband when I told him I was not only baking a pie but when the smoke alarm was going off.... yes please imagine! Confession 2: I was so scared during the baking process, please oh please let this turn out or I will NEVER hear the end of it!

I did it! I successfully bakes my first pie and pie crust plus when it came time to eat I got to huge thumbs up from the fam. YES!! Super easy and super simple, you must give it a try!
