whats your fav recipe?!

I am on this new health hick the last couple of months. Ok well I guess it's not new I have been trying to implement better eating & working out for awhile.  All in all taking care of my body so I don't look aged. I am not sure if it is the fact that I see photos of myself almost daily but I have become aware of the fact that I am starting to get older. From the way Taco Bell sits on my hips, to those glasses of wine bringing out wrinkles in my face I must start talking care of myself inside & out! I can no longer live off of fast food, mac & cheese, pop, or ice cream.... ok I lie I will always have ice cream that will never change! Going to the store every week to get fresh veggies, grains & chicken has been great but I a running out of ideas to make for lunches & dinners. Insert blogger help here! I am asking you ladies to tell me one of your favorite recipes that you make once a week.  It doesn't have to be complicated (in fact I would prefer it was simple!) but something healthy that you enjoy!! Readyyyyyy go.....

I wish I had a really trusty and wonderful recipe to give you, but I can't think of one off the top of my head! I am trying to incorporate healthier eating into my daily routine, though, so I will update you when I find a good one :)

I make a really good fajita with a thin cut of meat. You can use a low carb tortilla to make it really healthy. The only low carb tortilla brand I have found that doesn't taste like cardboard is Ole. I also like to use those for lunch and add a bit of mayo, bell peppers, cheese, turkey, lettuce, and tomato. Occasionally I use hummus. I need some healthy recipes, too and am thinking about doing the Whole 30. I also need to start working out on a regular basis so this weekend I'm going to get new running shoes. Now I just need to stay motivated! lol

My new favorite thing is a kale salad with homemade croutons and a homemade "cesar" dressing! We'll add chicken and avocados too to spice it up. It's so good and filling and just yum!

Store list:
Chicken breast
Ranch dressing packet
parmesean cheese
1 egg

preheat oven to 350 degrees
mix cheese and ranch
dip chicken breast into egg and then into cheese mixture. bake for 35-45 min.

Eat over a bowl of lettuce or pasta! YUMM!!!
