coconut chicken & Brussels sprouts recipe

I dont necessary love cooking but I love eating healthy and I am probably one of the pickiest eaters around. I have recently been introduced to Paleo in the past month or so and have become highly fascinated with it. It has lots and lots of rules and I don't follow them all but I have been trying to doing better! The past two nights I have been a slave to my kitchen and here is what I prepared:

I love coconut everything (could be my years in Hawaii, or natural sweet tooth) so when I came across this coconut chicken recipe I rushed to the store and made it immediately!
coconut chicken: 
+ 1 lb of chicken breast
+ 1/4 cup of almond flour
+ 1/4 cup of unsweetened shredded coconut
+ 1 egg
+2 tbs of coconut oil
1/8 tsp of sea salt
mix flour, coconut, and salt in a bowl. beat the egg in a separate bowl. dip chicken into the egg, then dip into flour mixture, then fry in a large skillet for 30 mins!  I sautéed a few colored peppers in olive oil as a side dish. 


Who hates Brussels sprout? Correct answer is any kid who was forced to eat them! Every Christmas dinner my mom made me eat at least one Brussels sprout... sick! Then I was out to dinner at a friends house and she asked if I liked Brussels sprouts.... my answer.... hummm no thank you. Well since it was already on the menu I put my big girl pants on and ate them. AMZING! Seriously these are not the same ones your mom forced you to eat they are delicious, I had seconds! 
Brussels sprouts: 
+ 4 cups of quartered Brussels sprouts
+ 4 stripes of cup up turkey bacon
+ 2 tbs of diced shallots
+ 1/4 cup of golden raisins
+ 2tsp olive oil 
+ 1/2 cup of chicken broth 
add oil, shallots, and bacon to large skillet. cook for 5 mins, then add Brussels sprouts and continue to cook for 15 mins stirring so they don't get burned. then add raisins and chicken broth and cook for another 3 mins.  I popped some (non Paelo, but natural) salmon in the oven and dinner was served!

I make a similar brussel sprout dish but always felt it was missing something. It had onions, boiled eggs and bacon in it. I fel like it was missing something sweet and the raisins will be perfect! Thanks for the recipe. Looks so good!

I have been following Paleo off and on for about 6 months now. I just picked up PaleOMG's cookbook and the recipe are so delicious! I am gonna need to give this chicken a try - it looks yummy!

Okay, I cannot bring myself to eat brussel sprouts...I guess it's the kid in me!! BUT, that coconut chicken....please make that for me when you come visit!! ;)
